Last-Minute Lazy Girl Tacos (feat. One Lonely Steak and Pantry Chaos)

Lazy Girl Taco

A couple of days ago, I had only one piece of beef steak left in my fridge. I’d already consumed the other five in the simplest way—cooked in the oven with some mushrooms. Five days of eating the same meal was enough. I needed change. Desperately.

So, I got creative. I dug through my pantry and threw together what I now call a “lazy girl taco recipe” using just pantry staples. It turned out mouth-wateringly delicious.

The Ingredients (for two tacos):

  • Half a can of green beans

  • One small onion

  • A few stalks of chive

  • Honey (to taste)

  • Cooking oil (any type)

  • One beef steak

  • Paprika (1 tsp)

  • Dill (1 tsp)

  • Two crunchy tortillas

Instructions:

First, cut your steak into thin vertical strips and place them in a bowl. Add 1/4 cup of oil, 1 tablespoon of soy sauce, 1 teaspoon of paprika, and 1 teaspoon of dill. Massage the marinade into the meat until all surfaces are coated. Cover the bowl and let it rest in the fridge for 30 minutes.

Heat a pan over medium heat with a little oil. Add a bit of honey (depending on how sweet you want it) and your onion, chopped into half-moon slices. Sauté until caramelized and golden, then set them aside.

In the same pan, add your green beans with a pinch of salt. Cook on low heat for five minutes, stirring occasionally to avoid burning. Set aside.

Add the marinated beef to the pan and cook slowly to preserve flavor. Add more oil or salt if needed. When the beef is nearly done, add the onions and green beans back into the pan. Stir everything together and cook for about 10 more minutes. Then turn off the heat, cover the pan with a lid, and let it rest for a few minutes.

While it’s resting, coat the inside of your crunchy tortillas with guacamole (or whatever sauce you love—no judgment). Fill them with your hot, juicy mixture.

They were sweet, savory, crispy, and everything I needed. I may have started with scraps, but this dish came out full-on gourmet.
